Hearty Soups

'Hearty Soups' are soups with 'backbone'; they are not just a collection of beans, meat and vegetables in heated water.

Hearty soups are hearty due to a nice blend of flavor starting with a tasty thickening agent as a base. All my recipes for soups have some kind of base taste and/or thickener. This thickener can be bean based, made from potato starch or the traditional boiling of cut up meat bones to get flavor. The soup recipe links below are all recipes I have tried and have become my favorites..
The history of soups is probably as old as the history of cooking. Once we realized that cooked food was not only safer to eat (most bacteria is destroyed at the boiling point) but also tenderized the food to the point where it required much fewer calories to digest, soups were born...

After all, what better way was there to combine meats, vegetables, water and other food sources into a convenient, one-pot meal?
