Easy Tomato Soup

'Easy Tomato Soup' perfectly describes the recipes on this page - easy to make and delicious tasting.

I never really liked tomato soup whether homemade or from a can until I tried these recipes. I always thought they were 'thin' for my taste and would never really fill me up.

Well, I was wrong... The combination of ingredients gives the soups a good body and creaminess making you feel you ate something substantial, especially when served with crackers.




I probably should mention that in the following recipes I use these abbreviations:
  • 't' refers to teaspoon
  • 'T' refers to tablespoon
  • 'c' means cup
  • '#' means pound
  • 'oz' means ounce

Easy Tomato Soup
2 cans (10.75 oz each) condensed tomato soup
1.25 c milk
2 packages (3 oz each) softened cream cheese
1 can (around 28 oz) whole tomatoes
1 onion, finely chopped
2 cloves garlic, peeled and finely chopped
1 t paprika
1 t basil
2 T butter
Melt butter in a soup pot over medium heat, sautee onions and garlic until onions are transparent (for the garlic, smash it with the flat of a knife and it will peel easily then chop up for sautee)
Remove pot from heat and stir into sauteed onion/garlic, paprika, basil and cream cheese. Gradually stir in milk then the condensed tomato soup.
Mix well (a beater works best) then add can of tomatoes. Mash the whole tomatoes with a potato masher and break up a little more with a fork. Stir well.
Heat soup over medium heat stirring frequently until hot. Serve.


The next recipe was originally a french version of fresh tomato soup and is also wonderful
Homemade Tomato Soup
5 ripe tomatoes (the riper the better) cut in quarters
1 T tomato paste
1 onion, finely chopped
2 cloves garlic, peeled and finely chopped
4 c chicken broth
1 bay leaf
juice from 1/2 lemon
1 t basil
1 t salt
1 t pepper
1 T parsely
2 T butter
Melt butter in a soup pot over medium heat, sautee onions and garlic until onions are transparent (for the garlic, smash it with the flat of a knife and it will peel easily then chop up for sautee)
Add quartered tomatoes, tomato paste, bay leaf, basil and simmer for 20 minutes, covered.
Put soup in a blender and puree then pour back in soup pot. Add lemon juice, salt and pepper, bring to boil and take off heat. Serve with parsely sprinkled on top.
