Carne Adovada
Carne Adovada is made of pork chops that have been marinated in chili sauce. The chops are baked right in the sauce and cooked until extremely tender.This recipe came from a friend of mine in Albuquerque, New Mexico. Mike had experimented with this dish for years and finally felt that he perfected it. After I made it, I agreed with him - it is perfection. Carne Adovada can be served plain with rice on the side or even over rice. In Santa Fe this recipe is baked without a cover causing the top layer to brown and slightly crust up. And in Mexico it is baked covered so it does not achieve a crust. I like it both ways, myself.
In my recipes I use the following abbreviations:- 't' refers to teaspoon
- 'T' refers to tablespoon
- 'c' means cup
- '#' means pound
- 'oz' means ounce

chili sauce (blender recipe) | | | | After you have made the chili sauce, merely place the pork chops in a casserole dish and cover with the chili sauce. Let this marinate for 24 hours, covered with foil. | | | | When ready to cook, pre-heat the oven to 350 degrees and put in casserole dish with pork, chili sauce and foil top and bake for 1.5 hours.
